Avial without coconut


No sadya is complete without avial. Usually avial is made of mixed vegetables along with grated coconut. But here is a recipe of avial without coconut or oil.

1/2 kg mixed vegetables, all cut in long strands (carrot, cucumber, drumstick, brinjal, beans, green chillies and shallots)
1tsp coriander powder
½ tsp cumin powder
1 tsp chilli powder
1 tsp turmeric powder
1 small bowl curd
A sprig of curry leaves
Water as needed
Salt as needed

Boil the water in a large heavy bottomed pan
Add the copped mixed vegetables in it
Close the bowl with the lid and let it cook
In a small bowl, add coriander powder, cumin powder, chilli powder, turmeric powder, and salt
Pour water into it and make a paste
Also add curd into the masala mixture. Mix well
Add this mixture into the pan
Now, add few curry leaves and mix thoroughly
Keep in low flame and let it cook
Delicious avial without coconut and oil is ready.
