Ash gourd moru curry

The ultimate cooler in a feast, the crunchy, transparent ash gourd pieces keep the flavoured curd in excellent company.

1 cup ash gourd, chopped into square pieces
3 green chillies, split
¼ tsp turmeric powder
½ tsp red chilli powder
A sprig of curry leaves
½ cup grated coconut
¼ tsp cumin seeds
2 cups thick beaten curd
Salt, as required

For seasoning

2 tsp oil
½ tsp mustard seeds
¼ tsp fenugreek seeds
3 dry red chillies, cut into two
A sprig of curry leaves

In a pan, cook the ash gourd along with salt, turmeric powder, chilli powder, green chillies and curry leaves
Now, grind the coconut and cumin seeds together to a smooth paste, and add to the thick curd
Blend well, take off the pan from the flame and pour into the ash gourd mixture
Mix very well and add salt
Make a seasoning of the ingredients listed and pour over the curry
Simple and cooling ash gourd moru curry is ready
